Pat's pick for Weekend Diversion. It's easy to be active outdoors and eat fresh, local food this time of year. Vermont's usually glorious early summer weather offers dazzling early morning bike rides and strawberries! For my extended family, that means gathering the "youngins" to go strawberry picking and then enjoying the results. Here's a favorite simple recipe:
Berry Berry Sundaes Ingredients 3 cups fresh sliced strawberries 1 tablespoon lemon juice 1 teaspoon sugar 1 pint nonfat raspberry sorbet or lemon sorbet, slightly softened
Crush 1/4 cup berries in a bowl with a fork. Add lemon juice and sugar, stirring until sugar is dissolved. Add the remaining 2 3/4 cups berries; stir gently to coat. Place a scoop of sorbet in each dish and top with the strawberry mixture.
Serves 4
